Elk Backstrap with Grandad’s Marinade

Ingredients

  • 1/3-2/3 cup oil
  • 1/2 cup red wine vinegar
  • 1 clove garlic
  • 1/4 tsp celery salt
  • 1/4 tsp pepper
  • 1/4 cup soy sauce
  • 1/4 tbsp worchestershire
  • 1/4 tbsp dry mustard
  • 12 tsp thyme
  • 1/2 tsp oregano
  • 1/2 tsp rosemary

Steps

Let meat stand in marinade 4-6 hours or longer.

Vermicelli Salad

Ingredients

  • 1 lb vermicelli or angel hair pasta
  • 1 cup finely chopped green onion
  • 1 cup finely chopped cucumber
  • 1 cup finely chopped tomato
  • Good Seasons Italian Dressing Mix
  • Vegetable oil
  • Finely sliced radishes to garnish

Steps

Cook Vermicelli or angel hair al dente. Drain and rinse with col water. Add green onion, cucumber, and tomato. Dress with dressing mix made according to directions, except using half the amount of oil and substituting good vegetable instead of olive oil. Add radishes before serving.
