Flat Iron Carne Asada Tacos

Ingredients

  • 2-4 Flat Iron Steaks
  • 1/2 cup canola oil
  • 2 tbsp red wine vinegar
  • Juice of 1 orange
  • 1/4 cup chopped cilantro
  • 2 tbsp minced garlic
  • 2 tbsp honey
  • 1 tbsp kosher salt
  • Black pepper to taste
  • 4-8 taco shells (flour or corn)

Steps

Combine the first 9 ingredients in a ziplock bag. Add steaks to marinate for 1-3 hours. heat a cast iron skillet to medium high heat on stove. Add a tspn of olive oil. Remove steaks from marinade and add to pan. Cook without moving for 2-3 min per side. Remove and reserve to a tray. Cover with tin foil and allow the steak to rest for 5 minutes. 

To assemble tacos, warm your flour tortillas or char them slightly over your has grill flame. Top with sliced flat iron steak, pico de gallo, and guacamole.

Pico de Gallo

Ingredients

  • 8 Roma or fresh tomatoes
  • 1 white onion
  • 3 limes
  • 1 bunch cilantro
  • 1 jalapeño (minced)
  • 1/2 tsp Kosher salt
  • 1/2 tsp garlic powder

Steps

Finely dice tomatoes, onions, and jalapeños and put in a bowl. Finely chop cilantro (including stems). Add lime juice, kosher salt, and garlic powder. Stir to mix and allow to sit in the refrigerator to chill.

Guacamole

Ingredients

  • 4 avocados
  • 1/2 cup pico de gallo
  • 1/2 tsp garlic salt
  • 1 lime (juiced)
  • Tortilla chips

Steps

Cut avocados in half, remove flesh and seed and put in a bowl. Mash with a pastry cutter, fork, or impression blender. Add the pico de gallo, garlic salt, and lime juice.
