Ingredients:

• 1/2 lb side pork.
• 2 tbsp of butter.
• 2-3 tbsp flour.
• 1½-2 cups of whole milk.
• 3-4 eggs.
• 1 tsp or salt (or more to taste).
• 1 tsp pepper (or more to taste).
• 1/2 loaf white bread.

Steps:

Fry side pork until crisp. Remove from pan and cool on a plate covered with a paper towel.

Reserve 2-3 tbsp of grease from side pork in the pan. If not enough grease, add some butter. You’ll want a good sheen on the bottom of the pan. Sprinkle in 2-3 tbsp butter and whisk until smooth. Slowly add in milk and continue to whisk until smooth. Slowly add in milk and continue to whisk until smooth. Crack 3 eggs in one at a time. Continue to whisk. The eggs with thicken up the gravy. Add salt and pepper.

In the meantime, start toasting bread. Serve gravy over toasted bread with a side of side pork. You can also pour the gravy in a bowl and dip your toast into the gravy, which is how it’s traditionally served in Sweden.
