Ingredients

  • 1 sweet Vidalia onion
  • 1 lb red new/baby potatoes or 3 large back potatoes
  • 1 lb ham/ham steak
  • 1 lb white mushrooms
  • 9-10 ounce of black spinach
  • 1 dozen eggs
  • Splash of milk, cream, or water (as desired for egg mixture
  • 1 tbsp butter
  • Salt & Pepper
  • Cottage cheese and/or sour cream

Steps

Saute sweet vidalia onion and potatoes with butter, salt and pepper in skillet, until potatoes soft with fork touch. Cube ham/ham steak and add to skillet. Clean and slice mushrooms and add. Grease a baking dish and place contents from skillet to dish. Add spinach and gently fold into the mixture. Cover with aluminum foil and place in oven for 350 degrees for 30 minutes. Crack one dozen eggs and add a small  amount of water, milk, or tea. Beat until lemon yellow and sutee until just gelled. Remove mixture from oven; place on top of mixture and place back in oven until ready to serve. Serve with cottage cheese or sour cream.
