Scotch Eggs
Ingredients:
8 oz. raw ground breakfast sausage of your choice
2 hard-boiled eggs
4 oz. Panko bread crumbs
½ cup all purpose flour
Canola Oil
2 tomato slices
Balsamic Mayo:
½ cup mayonnaise
3 tablespoons Balsamic vinegar
Combine two ingredients in bowl.
Directions
Start with a pot of cold water. Add eggs. Bring to a boil and cover. Turn off heat and leave for 12 minutes. Remove eggs and put in a cold ice water bath. Shake the bowl to start the egg shells cracking. Peel eggs. Wrap each egg in 4 oz sausage. Roll in flour. Roll in Panko.
Heat 3 inches of Canola oil to 350 degrees. Fry wrapped eggs in oil. Cook until golden brown about 4 minutes.
Cut eggs in half and plate with the tomato slices
Drizzle with balsamic mayo.
